Hummus with roasted eggplant

Ingredients

Eggplant
Olive oil
Onion
Knob of garlic
Ginger
Brown sugar
Cinnamon
Coriander
Salt, pepper

Preparation

Cut the eggplants into slices, salt on both sides and leave them on kitchen roll for 10 minutes to remove the water.

Dab off the salt and water and cut the eggplants into cubes.

Heat olive oil and caramelize a small finely chopped onion, 1 grated clove of garlic and 1 cm piece of ginger together with a pinch of brown sugar.

Season with salt, pepper, ½ tsp cinnamon and ½ tsp ground coriander.

Then add the eggplant cubes and fry golden brown and let cook for at least 15 minutes.

Arrange the hummus in the form of a hollow, place the eggplant cubes in it and sprinkle with coriander leaves.
